Bikini Recipe

Yields 10 people

Ingredients for the Citrus Syrup (yields 750ml)

300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g fine sugar

Ingredients for the Drink (makes 850ml, to serve 10)

400ml good quality vodka
100ml London dry gin
150ml peach liqueur
200ml citrus syrup (see above)
A few cranberries, for garnish
Mandarin essential oil, as a final touch

Instructions

Making the Citrus Syrup: Combine the listed ingredients inside a pot, heat until it reaches a gentle boil, stirring so the sugar melts. After that, take off the burner allowing it to reach room temperature entirely. Transfer into a clean bottle, close it and store chilled, it can be stored for around a month.

To make Batch Mix: Mix the specified liquid ingredients into a big jug, allow it to infuse for 60 minutes, then pass it through , ideally through muslin, so it's perfectly clear.

To serve: Add 85ml of your batch mix into a cocktail shaker containing ice, and agitate carefully for one minute to chill. Strain to a chilled martini glass or equivalent, decorate with the cranberries adding the final touch using a light spray of mandarin oil over the top.
